Who doesn’t like a good mexican dish? But it’s got to be good and quick not “fast”, if you get my drift. And it doesn’t even need to be that quick actually, (wink, wink).
I like tacos, burritos, enchiladas, salsa, guacamole,…..oh so much goodness to partake. Not enough meals in a day to get it all in, sadly. There are so many ways to make it all, so here is one of my versions of a quesadilla. It’s a ground turkey quesadilla with spices and cheese. So yummy. Go ahead and mix it up with whatever you like, it’s okay, nobody will mind, nor know the difference. Eat up!!

Ground Turkey Quesadilla 

Ingredients:

Seasoning mix:
1 Tablespoon chili powder
1 Teaspoon ground cumin
1/2 Teaspoon garlic powder
1 Teaspoon onion powder
1/2 Teaspoon salt
*if you like it spicy, add cayenne to taste

2 Pounds ground turkey
1 Cup water
3 Tablespoons taco sauce
Tortillas
Lettuce
Tomato
Sour cream
Shredded cheese, use your favorite
Butter

Directions:

Combine chili powder, cumin, garlic powder, onion powder and salt.  Mix well and set aside.

In a skillet over medium high heat, brown ground turkey. Once browned, drain fat, if any, add spice mixture,  taco sauce and water.  Stir until well mixed.  Let simmer 5 minutes or until water is absorbed, stirring occasionally.  Remove from heat.

In a separate skillet, add a pat of butter and let melt.  Lay a tortilla in the skillet and add desired amount of cheese and ground meat mixture.  Put a second tortilla on top and sprinkle a small amount of cheese on top of that tortilla. Fry until crispy then flip over, (don’t worry, the cheese on top will be okay), and fry until that side is crispy also, about 1-2 minutes each side.

Plate alongside chopped lettuce tomatoes and sour cream.

Eat up and enjoy!

Serves 4 to 6
