Soup is wonderful! I can eat it every day, all year long. It’s so comforting. I came up with this when I was looking for something new to do with potato soup. I think this soup will be loved by the whole family. So, eat up and enjoy!
6-8 servings
approximately 30 minutes cook time
Ingredients:
2 pounds mild Italian sausage, bulk or links, chopped
2 pounds red potatoes, diced
4 Cups broth, use your favorite (I used vegetable broth)
2 Cups water
3 Bay leaves
1 Onion, diced
3 Cloves garlic, minced
1/2 tsp salt
1/2 tsp pepper
2 cups Kale, chopped
2 Cups heavy cream
1 Tbs olive oil
Directions:
In a large skillet, over medium heat, cook sausage until brown. Remove from skillet and drain on paper towel.
While sausage is browning, in a large stock pot, heat olive oil, add onions and garlic. Cook until translucent. Add broth, water, bay leaves, potatoes, salt and pepper. Stir together and bring to a boil. Reduce heat and simmer until potatoes are fork tender. Add sausage and kale, simmer for 5 minutes. Turn heat to low and stir in cream. Heat for 3 minutes, DO NOT BOIL. Cream will curdle if boiled. You just want to heat the cream. Turn off heat and ladle into bowls. I sprinkled cheese over top of soup after ladling into bowls but I found it was good without it too. Serve and Enjoy!
